In the field of food and beverage product development, the elimination of high spore counts is frequently achieved through direct sterilisation.

However, traditional thermal processing methods can compromise the sensory quality, cause off-flavours, induce ingredient degradation, and affect the functionality of sensitive products, such as protein-rich or plant-based milks.

This presents a fundamental challenge to R&D teams seeking to maintain product integrity during high-temperature processing.

To address the limitations of conventional methods, the OMVE HT324 was specifically engineered to deliver maximum flexibility in thermal treatment, allowing R&D teams to achieve the most stringent sterilisation conditions at 150°C with the minimum possible impact on the product formulation.

The HT324 achieves its delicate balance between sterility and quality by combining two distinct technologies – Direct Steam Infusion and Steam Injection – operating at a capacity of 100 L/h to 200 L/h.

The system instantly heats the product by passing it through a steam-conditioned chamber. This technique guarantees extremely short retention times, minimising the period of exposure to high temperatures.

Crucially, the subsequent cooling step is achieved just as rapidly in an expansion tank under a vacuum of 0.2 bar (a). This rapid reduction in temperature significantly minimises degradation.

The system is highly automated and includes automated CIP and SIP, making it the definitive solution for Ultra-High-Temperature (UHT) and High-Temperature Short-Time (HTST) trials. It is specifically suitable for sensitive products such as baby food, non-dairy creamers, and various milk alternatives.
